It's Pancake Day! I freaking love pancakes. Here's my favourite pancake recipe, they're high protein, low fat, taste awesome and are pretty much idiot-proof.
4 beaten egg whites
100g low fat cottage cheese
2 tbsp oats
1 tbsp self-raising flour
Almond milk (or normal milk, I just like the taste of almond).
Coconut, blueberries, pumpkin, whatever else you want in it
Coconut oil (for cooking)
Whisk it. Cook it. Done.
